I know it’s been awhile since I posted! I am between apartments and trying not to completely unpack all my kitchen tools in my sublet for this month. But having Better Beast Peanut Butter come to a Flywheel ride tonight was just too exciting! I quickly whipped up a healthier version of my favorite snacks - Chocolate Peanut Butter No-Bakes.
Chocolate Peanut Butter No-Bakes take less than 10 minutes start to finish to make, and you probably already have all of the ingredients in your pantry already. In fact, they are called Preacher Cookies in the South, because you can always whip them up at the last minute if you see the preacher coming down the road! Although that probably requires a window with a view, and from my 5th floor walk-up I can only see a brick wall. So for NYC, I’ll stick with the term Chocolate Peanut Butter No-Bakes.
Chocolate Peanut Butter No-Bakes
These little treats make a great post-workout recovery snack due to their portability. Plus, Better Beast Peanut Butter has more protein than regular peanut butter. It also has a slight hint of cayenne which is a great complement to semisweet chocolate!
½ cup Better Beast Peanut Butter
1 stick grass-fed butter
½ cup honey
½ cup dark chocolate chips
½ cup almond or coconut milk
4 tablespoons cocoa powder
Pinch of salt
2 teaspoons vanilla extract
3 cups gluten-free oats
In a medium saucepan over low heat, melt together peanut butter, butter, honey, and chocolate chips. Remove from heat and whisk in almond milk, cocoa powder, salt, and vanilla. Place oats into a large mixing bowl and pour chocolate peanut butter mixture over top. Fold together with a spatula. Make small scoops of the mixture, about 2 tablespoons each, and roll into a smooth ball. Place balls evenly spaced on a wax-paper lined and flatten with the back of a spoon. Let chewies firm up at room temperature. Store in an air-tight plastic container separated by sheets of wax paper.
