Citrus Salad

This refreshing side dish is both juicy and flavorful. The grapefruit is surprisingly sweet in addition to sour, and adds novelty to the familiar taste of the oranges. Red onion adds a bit of a bite, and chopped fresh mint makes the flavor really sing! With pomegranate seeds for a little crunch, this Citrus Salad is sure to make any meal more exciting.


4 pink grapefruit, peeled and segments removed from pithy white skin

4 oranges, peeled and sliced thin across segments

1 pomegranate, seeded

½ red onion, thinly sliced

¼ cup fresh mint, chopped

¼ cup olive oil



Combine! Can be eaten immediately, but the flavors really marry when refrigerated overnight. Enjoy!
