Hi there, I'm Caitlin!

I am a dancer, fitness professional, Pittsburgh-native, resident New Yorker, dog-lover, and country music fan. I have been eating, cooking, and baking grain-free and dairy-free for almost 3 years now. I am so thankful to have discovered the Paleo lifestyle!

Rewind to August 2014. I had just moved to New York City and was super excited to start the next chapter of my life as an NBA dancer. Things were great for awhile -- I was in relatively good shape, ate “healthy”, and was amazed at how easily fun opportunities came my way in this city! I certainly had no idea I was about to experience a huge health overhaul.

Starting in mid-October, my energy started to take a dive. I was up at 5 AM most mornings teaching fitness classes and training private clients, doing my own workouts in the afternoon, and had grueling dance practices or games to perform at most evenings. My nutrition started to get out of whack. When was I supposed to eat, and what? Carbs? Protein? Fat? I was active all day long every day. I felt like I was always hungry, but I was GAINING WEIGHT. Surely this can’t be right! The worst part was I napped for 2-3 hours every single afternoon, even after sleeping 7-8 hours the

night before. The fatigue was unbearable and it was affecting my dancing. I used to be psyched at the thought of getting paid to dance and perform every evening, but now I found myself dragging through each practice, and counting down the minutes until games were over. I was numbly going through the motions and settled into a lull of acute unhappiness.

This went on for a few months, until mid-January when I knew something really needed to change. I followed a few personal trainers on Instagram who kept talking about this “paleo” thing. I typically would glaze over these posts and not read them in detail, until one heartfelt testimonial popped out. This woman described how after just a week of eliminating grains and dairy from her diet, there was a noticeable increase in her energy. I was skeptical that this would work for me (besides, aren’t whole grains healthy?), but I thought a week was something I could commit to and I was DESPERATE. Plus, every paleo person seemed like the world’s biggest fan of bacon. I told myself if I was REALLY craving bread or pasta, I would just cook up some bacon. Simple.

Day 1: Okay, deep breath, I can do this. Remember -- bacon.

Day 5: For the first day in LITERALLY months, I didn’t need a nap. I beasted my afternoon workout and left the gym feeling stronger than ever.

Day 7: It’s been a week already?! That wasn’t too bad. I feel really inexplicably good. Let’s go for one more week!

Day 14: Feeling REALLY energetic. Constant acute hunger no longer bothers me. Eating so much fat is confusing to me.  I feel like I should be gaining weight, but I’m not. Bloating is no longer a thing. Let’s keep going.

Day 28: Looking lean AF, without even trying! I have so much energy! I love food so much! Bacon bacon bacon! I haven’t eaten bread in a month?! Madness! I will never eat bread again! Paleo has won me over FOR LIFE!

This was awhile ago so I am working from memory here, but my paleo conversion went something like that.
